Easy Leftover Chicken Salad


Need more ideas for a healthy lunch?  Tired of plain boring chicken?  Me too.  This is a quick and easy recipe I like to make for lunch when I have left over chicken.  Sometimes the leftovers are very flavorful - we had Cajun seasoned chicken the other night - and some times not.  Today I had some rotisserie chicken to use, so bland it is!  Just kidding!  I added my own flavor.  

I just got some of the new spice rubs from The Pampered Chef and decided today was the day to try out the Indian Mild Curry Rub.  It goes great with the yogurt I wanted to use instead of mayo!

I also wanted a healthier alternative to crackers, so I decided to use cucumber slices and apple wedges as my "chips" of choice.



I gathered all my ingredients and tools.  I LOVE making chicken salad in my
Manual Food Processor.  Super quick, don't have to shred or cut the ingredients into small pieces, it mixes everything together and it is super easy to clean.


After 8-10 pumps of the handle, voila! Chicken Salad - perfect for spreading.



Next I sliced up the cucumber.  



And then the apples...



And finally put my plate together!




Delish AND healthy!  What more can you ask for?  The crisp cucumbers and sweet-tart apples were PERFECT with the Mild Indian Curry Rub.  So tasty.


Easy Chicken Salad
From: Sarah’s Pampered Kitchen

4-6 ounces left over chicken
1-2 tablespoons Greek yogurt
The Pampered Chef seasoning, your choice, to taste (1-2 teaspoons)
Salt & Pepper, to taste
Cucumber
Apple

  1. Cut chicken into 2-3 inch chunks.  Add chicken, yogurt, and spices to the bowl of your food processor.  Pulse or pump 6-10 times.  I like to use Manual Food Processor.
  2. Slice the cucumbers and apples to your liking.
  3. Enjoy!
